He uses each program because they all have different purposes for editing. I know this because I use four of them to edit HaruhiISM The Abridgement.
Pretty much Premier is the main video editer, after effects is adding effects and finalizing the video, audacity is to edit the audio, Photoshop is to edit still images so they can be added into the video eg: mouths, so you can have a character talking in a scene where they wouldn't be. I'm not familiar with Audition though, I may look into it to see how it effects the editing but it sounds like a more advanced version of audacity.
